Chicken Tortilla Soup

Chicken Tortilla Soup Recipe


  • 2 large chicken breasts (baked and cut into bite-size chunks)
  • 4 tbsp. cannabis olive oil
  • 28 oz. canned crushed tomatoes
  • 10 oz. chicken stock/broth
  • 1 cup water
  • 1 sweet onion
  • 3 garlic cloves (minced)
  • 1 tbsp. olive oil
  • 2 tsp. chili powder
  • 1 tsp. oregano
  • 1 cup cooked corn
  • 2 green chili peppers (chopped)
  • 2 cups black beans
  • 1/4 cup cilantro
  • Crushed tortilla chips or thick flour tortillas ripped into shreds
  • 1/4 cup chopped green onions
  • 1/4 cup Mexican cheese
  • Directions:

    Get out a medium pot and heat the 1 tablespoon of regular olive oil over medium heat. Sauté the onion and garlic until the onion is just translucent. Next stir in the oregano, chili powder, chicken broth, tomatoes and water, bringing to a boil for 5 minutes. Stir in the corn, chiles, cilantro, cooked beans and chicken, reducing the heat to a simmer for 5 minutes. Add the cannabis olive oil and simmer another 5 minutes. Serve the soup in bowls. Mix crushed tortilla chips/tortilla pieces, green onions and cheese and enjoy.
