Raspberry Cheesecake Muffins

Preheat the oven to 375 degrees F, before either greasing or lining with paper cups a muffin tray. Get out a medium mixing bowl and mix together the cream cheese, sugar, 1/2 tsp. vanilla and 1 of the eggs and set aside once mixed. Next put the milk, butter and remaining vanilla extract in a saucepan over medium heat, stirring constantly. Set this aside until it cools down significantly. Now beat the remaining two eggs into this mixture. It's important it is cooled down or the eggs will begin to scramble from the heat. Get out a large mixing bowl and combine the flour, 3/4 cups sugar, salt and baking powder, finally adding the butter mixture in the saucepan to this. Now add in the raspberries, before filling the spaces in the muffin tins up until they're around 2/3 full. Lastly add 2 tbsp. of cream cheese on top of each muffin and place in the preheated oven for 23 - 27 minutes.
