Gingerbread Muffins

Heat the oven to 400. Spray 12 muffin cups with a non-stick cooking spray. Combine all of the dry ingredients in a large bowl and mix together. In a separate bowl, combine the olive oil, molasses, eggs and buttermilk. Stir the liquid mixture into the dry ingredients, just until the dry ingredients are all moistened. If you over-mix, your muffins will have a bunch of bubbles. Pour the batter into the muffin cups, filling them to about 3/4 full. Bake for about 15 minutes, or until a toothpick comes out of the center clean. Remove from the pan and if you are going to frost them, let the muffins cool completely first.
